Each of them has a unique look and feel to them, which as always, rewards exploration and offers different challenges and rewards. When you want to do a cave playthrough, spawning on the surface of the Overworld doesn’t give you a very good insight into what sorts of cave systems you’ll have in your world, potentially ruining your run before it even began.
